Pectoluc™ is a Pectin, extracted from the peel of Citrus fruits.
Grades:
1. High Methoxy, Medium Rapid Set - useful for the manufacturing of jam.
Setting Temperature: 74-80oC
Setting Time: 75-125Sec
USA(SAG): 150 degree +/- 5
Degree of Esterification: 66-70%
pH (2% solution): 3 -3.8
Pectin available has;-

- Produces high clarity solutions
- High uniform gel strength
- Aids in food protein stabilization
2. Specially prepared HM Pectin to prevent adverse curdling reactions during acidification of milk when mixing juice with milk, or during subsequent heat treatment of acidified milk/yoghurt drinks.
